Ayam Bakar Taliwang (Taliwang Grilled Chicken)


Taliwang Chicken come from areas in Lombok (West Nusa Tenggara) named Taliwang. The characteristic of this grilled chicken is using a simple seasoning, really hot sensation from red pepper and bird’s eye chillies, use a free-range chicken and cook in a firewood to give a smoky flavour.


  • 1 free-range chicken
  • 1 teaspoon lime juice
  • 1 teaspoon palm sugar
  • 1/2 teaspoon salt
  • 3 tablespoon oil

Spiced Paste

  • 8 shallots
  • 6 cloves garlic
  • 2 red pepper
  • 10 bird’s eye chillies
  • 4 candlenuts
  • 1 teaspoon shrimp paste


  • Clean chicken, crack chicken but don’t cut it or break it fully, then press it until it is opened or simply cut it into 4 parts.
  • Smear it with salt and lime juice. Grill chicken until half cooked or about 5-10 minutes. Set aside.
  • Heat oil in a large pan over medium heat, add spices paste and fry until fragrant, add salt, sugar and water. Add chicken, smear chicken with spices and cook until most of liquid is evaporated
  • Grill chicken until cooked and skin is charred, about five minutes.
