Here in Jakarta we’ve been bombarded with rains. What else you need besides a bowl of hot soup on the rainy day. This sup ubi or cassava soup is originated from Sulawesi. The name of sup ubi itself often give a misconception for Indonesian people outside Sulawesi. For people in Sulawesi ‘ubi’ it refers to cassava while for those outside Sulawesi ubi it means sweet potato.
This cassava soup often consisting beef broth, egg noodles, cellophane noodles, fried & boiled cassava, bean sprouts and beef. Some people like to add meatball and a slice of hard boiled egg.
- 2 liter beef stock
- 250 gr combination of any other beef cuts you enjoy
- 500 gr cassava, peeled and washed
- 100 gr glass noodles, soaked in hot water and drain
- 100 gr egg noodles
- 150 gr bean sprouts
- 5 cloves garlic
- 2 shallots
- 1 teaspoon white pepper cloves
- Fried shallot
- lime wedges
- green onion
- sweet soy sauce and sambal
- Using mortar and pestle grind all the ingredients for spices paste. Set aside
- Place beef cuts in a stockpot and cover it with water. Bring it to boil over medium-high heat, then lower the heat to gently simmer.
- Heat about 1 tablespoon oil in a pan or wok, add spices paste and stir fry for about 2 minutes until fragrant. Add spices paste to the beef and continue to cook until beef is tender. Remove the beef and set aside.
- Fried cassava until golden brown and set aside.
- To assemble: Distributed the cooked noodles and glass noodles among individual bowls. Arrange boiled cassava, beef chunk, fried cassava and bean sprouts on top of the noodles. Sprinkle chopped green onion and chopped parsley. Ladle hot broth into each bowl. Serve with peanuts, lime wedges, sweet soy sauce and sambal.
